 Remark
 Has firm, sweet meat which is much appreciated for fish-and-chips and other dishes. The belly flaps can be hot smoked and are a delicacy in Germany as Schillerlocken. Proper bleeding of the fish when caught or marinating the meat in an acidic solution before cooking can prevent ammonia development in the meat. Used for frying, broiling and baking.
